Chocolate Coconut Island Blondies

These are a tropical version of a blondie. Be careful with the type of rum extract that you use: some brands leave a very artificial aftertaste.

Chocolate Coconut Island Blondies

Ingredients

  • 426 g (2 cups) brown sugar
  • 1 stick (8 tbsp) unsalted butter
  • softened
  • 2 large eggs
  • 2 tsp rum extract
  • 2 tbsp milk
  • 1 tsp salt
  • 2 tsp baking powder
  • 240 g (2 cups) flour
  • 60 g (1 cup) unsweetened shredded coconut
  • 10 oz bag mini M&Ms

Directions

  1. Preheat oven to 350° F (177° C).
  2. Beat the butter and brown sugar until very creamy and fully incorporated.
  3. Add the eggs, rum extract, milk, salt, and baking powder. Beat until fully incorporated.
  4. Stir in the shredded coconut and mini M&Ms until just incorporated. Do not over-mix.
  5. Spread in a greased 9x13 inch pan, and bake for 26-30 minutes - or until your desired firmness. Let cool completely before cutting.
